Introduction: Easy Coconut Lime Avocado Cream

This dessert is amazingly delicious; creamy, sweet, and a little bit tangy. Not to mention, extremely healthy!

Step 1: Gather Ingredients & Tools

Ingredients for one small serving:

- 1/4 medium avocado
- 1.5 shots of vanilla coconut milk 
- about half a lime
- honey (to taste)

Tools: 

- preparation bowl, custard cup (if you want)
- fork, spoon
- measuring device
- cheese grater

Step 2: Mash It Up!

I don't have a blender... luckily for me I like chunky foods. Squeeze 1-2 small slices of lime and mash a quarter of a ripe avocado until it's pretty smooth. 

Step 3: Add the Milk, Honey, and Maybe Some More Lime...

Add the coconut milk and a generous squeeze of honey. Stir until frothy and give it a taste, adding more lime or honey as needed. 

Step 4: Chill It!

Stick the bowl in the freezer, stirring every 15 minutes. Total time will vary depending on your serving size and freezer temperature, but the mixture should be an ice cream consistency within 30 to 40 minutes if not sooner. 

Step 5: Zest It!

Grate some lime rind on your avocado cream just before serving (this really "makes" it). Garnish with a small lime slice if you want.

Step 6: Eat Up!

It's ready to enjoy! :)


Notes: 

I don't have calorie information for this because it varies a lot depending on the size of your avocado. But the general rule of thumb is 50 calories per ounce of avocado, and vanilla coconut milk has 90 calories per cup. All this to say, avocado is great for you so feel free to indulge in a large helping or two any time of the day!

Also, it's tasty without lime if lime isn't your thing.
