In this instructable I will show you how to make Ice Cream Rolls. Homemade Ice Cream rolls are pretty easy to make, although they can be a bit tricky at times. Ice Cream Rolls originated in Thailand, and over there they call them "stir fried ice cream." Some day I will visit there and try real "Thai" Ice cream rolls, but for now I will make them at home. If I can make these, you can make these, let's get started!

Step 1: Ingredients/Tools
- 1/4 cup heavy whipping cream (60ml)
- 2 Tbsp. whole milk (30ml)
- 1 Tbsp. of white granulated sugar (15g)
- 2 oreo cookies (or other ice cream mix-ins)

Step 2: Chill Your Pan
First we want to put our sheet pan or ice cream roll kit pan in the freezer. I like to put it in there for at least 2 hours, so I usually do this in advance.
Step 3: Ice Cream Base
Now we make our ice cream base. Three simple ingredients, add our heavy whipping cream, whole milk, and sugar do a small pot.
Step 4: Heat the Ice Cream Base
Now we set our burner to medium high and stir until it bubbles, usually only takes a few minutes. Make sure to stir, otherwise the sugar could burn. The reason why we are doing this is to make sure the sugar dissolves and mixes in properly with the cream and milk. Then once it boils, take it off the heat and place in a small bowl, next put that bowl in the fridge and let it chill for about 20 to 30 minutes. You can also just leave it out on the counter until it reaches room temperature.
Step 5: Chop, Spread, Freeze
Now comes the fun part! After our ice cream base has cooled, we add our oreo cookies or whatever topping we want to the base, then pour it out onto our chilled pan. Then with our pain scrapers we scrape it all to the center and then chop chop chop the cookie, this will blend in the cookie with the cream as well as add air to the cream making it more fluffy. Make sure to scrape it all to the center when it runs away from you, don't worry it will do that a lot. Then after a few minutes of doing this, you spread it out flat, roughly 1/8th of an inch thick. Then place it in the freezer (level). And let it freezer for at least 4 hours. This is very important.
Step 6: Roll Them Out!
Next after the ice cream has frozen, we need to work very quickly, take the pan out and place it on the counter or table and then take a paint scraper and hold it at about a 45 degree angle and push away from you, this will roll the ice cream. Then take some tongs and grab it and place it in a chilled bowl.
Step 7: Top It Off
Now you can top your ice cream rolls off with some whipped cream, cool whip, pretty much your favorite ice cream Sunday toppings. Enjoy!
- If the ice cream isn't rolling and gets all soft and mushy, the ice cream is not cold enough. It really needs at least four hours.
- Chill your ice cream scraper in the freezer before trying to roll them out. At least 30 minutes.
- Chill your bowl that you will be serving them in. This will help keep them from melting too quickly.
