    looking forward to trying this!

Fresh cream is vegetarian but not vegan. Vegans are a little bit hardcore. Most vegetarians just don't want to eat products that have been created by taking an animal's life. Cream is made by skimming the milk fats, and if organic and cruelty free then the cream is fine.

Great idea about the egg-less mayo...seems appropriate with the rising cost of eggs. Your first ingredient listed is "fresh cream". FYI: cream is not vegan. You could substitute with soy creamer, almond milk, or other non-dairy milk and adjust the amount of whatever non-dairy liquid you decide to choose.
