You may already be familiar with this recipe, except for one ingredient. I have added espresso powder. Yummy!
I hope you like the addition.
This recipe can be made quickly in the microwave. You will need:
9 cups Chex cereal (I used rice Chex)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 tablespoon espresso powder
1 1/2 cups powdered sugar
Measure the cereal in a large bowl and set aside.
In a microwavable bowl, melt the chips, peanut butter, and butter on high 1 minute. Add 30 seconds if needed. Mixture should be smooth.
Stir in the vanilla and espresso powder.
Pour the mixture over the cereal and coat evenly.
Pour it all into a covered bowl or ziploc bag and add the powdered sugar.
Shake it up.
Store it in an airtight container in the refrigerator.
