FRIED COCONUT PORK RIBS WITH THAI CURRY SAUCE


6 Pork Ribs
1 Tablespoon salt & pepper mix
1 ½ Cups AP flour
2 Eggs, beaten
2 Cups Panko bread crumbs
1 Cup shredded coconut flakes
1 Tablespoon black sesame seeds
2-3 Cups oil for frying

Thai Curry Sauce:
1 Can coconut milk
1 Teaspoon Garlic, minced
1 Tablespoon onions, small diced
1 Tablespoon Green Thai curry
1 Lime juiced & zested
1 Tablespoon cilantro, finely chopped

Preheat oven to 350 degrees. Preheat a shallow amount of oil in a small pot to about 325-350 degrees. Take the pork ribs and season with salt and pepper. Set up your three step breading procedure with flour and eggs in separate pans. In another pan mix together the panko and coconut for the final breading step. Once that is all set up, take each pork rib and dip in flour; shake off excess, then into the eggs; drain for a second, and roll around in the panko mixture.

Once all the ribs are breaded carefully place them into the oil and fry till golden brown on all side. Place them on a sheet tray and into the oven for about 15-20 minutes.

While those are in the oven make your sauce by combining the coconut milk, garlic, onion, Thai curry, lime and cilantro in a sauce pan. Heat and simmer for about 10 minutes.
