Onion soup is one of my favourite comfort foods. It's warm and hearty, it has that amazing sweet onion flavour and you can top it with a toasted gluten free bun and lots and lots of cheese. It's perfect!
And it's very easy to make! In this Instructable I'll show you how.
Step 1: Gather Your Ingredients
This is what you'll be needing for four people:
- 1 kilo of yellow onions
- 50 grams of butter (you can substitute for plant-based butter and make it vegan!)
- 2 to 4 sprigs of thyme (depending on the size)
- 2 large bay leaves
- 1.5 litres of vegetable or chicken broth (pictured are the stock cubes I used, if you use them, use 3.5-4 cubes for the 1.5 litres so the soup has a strong taste)
- 200 mililitres of wine
- Salt and pepper
And, if you want:
- Slices of roasted gluten free baguette (depending on the kind of baguette, this could be 4, 8, or even 16)
- 150 grams of Gruyère cheese
Step 2: Preparation (a.k.a. Cutting a LOT of Onions)
The first thing you'll need to do is cut your onions. This is a long process but it's totally worth it!
You can cut them however you prefer. I personally like them roughly diced (mostly because it makes for easy and quick cutting) but a lot of people prefer rings. Go with what you like!
Step 3: Starting It Off
The first thing you'll want to do is pick a good, heavy pot or French/Dutch oven.
Next you can melt the butter over medium heat (don't let it burn!). Once the butter is fully melted, add the onions and reduce the heat to low. When they're starting to soften, throw in your thyme and bay leaves and pop the lid on.
Let them cook until they're really tender, caramelized and soft, this will take at least 30 minutes. You can choose to keep them on longer or shorter, depending on what you like in terms of taste.
Step 4: Adding the Liquids
Next, you're gonna add the wine. After you've done this, increase the heat a little and stir so the wine and onions mix well.
Immediately after you can add your broth, stir, and put the lid back on. Let it simmer for another 5-10 minutes.
Step 5: Finishing Up
Once it's simmered for a little longer you can add your salt and pepper (to taste).
You can eat it like this or you can take your slices of baguette, put two in each bowl and divide the Gruyère between the bowls. Put them under the grill in your oven (or, if your oven lacks that function, just put them in the oven) for a few minutes, until the cheese has melted.
