Introduction: Fries Quatro Queso Dos Fritos

About: I am ahat enthusiest. I collect them and make them. I currently live in Istanbul, but used to live in Tajikistan and before that Kentucky.

I was watching Psych the other day and I heard a guy descibing a basket of fries he ate. He called them "Fries Quatro Queso Dos Fritos" I thought about that, and this contest, and decided to try something similar. I called my friend ( his name is Tunafish) and he agreed to help out.

Step 1: Supplies

This is a list of all the ingredients you need.
For the fries:

Potatoes: preferably small, as many potatoes as you want.

4 types of cheeses: I used mozzarella, Parmesan, cheddar and a Turkish cheese, but I would use pepper jack instead of the latter.

frying oil.

For the Honey Mustard sauce:

1/2 cup mayonnaise
2 tablespoons prepared yellow mustard
1 tablespoon Dijon mustard
2 tablespoons honey
1/2 tablespoon lemon juice

For the Barbecue Sauce:
1 cup of ketchup
1/4 cup of vinager
1/4 cup of Worcestershire sauce
1/4 cup of brown sugar
1 tsp. celery seed
1 tsp. chili powder
1 tsp. salt



For the batter: 
1/2 cup flour
1/4 cup cornstarch
1 large egg
1 tsp. baking powder
1/2 tsp. paprika
1/2 cup water
1/8 tsp salt

Step 2: Preparing the Potatoes

Take your potatoes and carefully peel them. (always peel away from you). Then rinse them and cut a half inch lid off the top of the potato. Take a potato and a small knife. Holding it over a trash can, carefully carve outside the inside of the potato leaving a quarter to half inch boundary all around.
 Then set the potatoes in a bowl and rinse them again, to make sure no pieces of skin or dirt remain.


Note: you might want to prepare your sauces before hand. If so: go to step 

Step 3: Stuffing and Closing the Potatoes.

Next, take your cheeses and shred them if they aren't already. Making sure you get even amounts of each, stuff your carved-out potatoes either your cheeses, cramming as much in as you can. Place your lids on your potatoes and stick 2 toothpicks, one on each side, through the lid and tino the side of the potato, closing it effectively.

Step 4: Frying the Potatoes, the First Time

Take a large pot and place it on your stove. Fill it with enough frying oil to go half an inch over your potatoes. Attach your cooking thermometer in and make sure it doesn't touch the bottom of the pot. turn on your stove on high heat. When your oil reaches 360 degrees turn down the heat and slowly place your potatoes in the oil, being careful not to burn yourself. leave your potatoes in the oil until they are starting to get golden brown and crispy on the outside. Then take a large metal spoon with holes in it and lift out your potatoes, placing them on a metal rack to cool.

Step 5: Batter and Second Fry

While your potatoes cool, mix up your batter. Simply place all your dry ingredients in a bowl and whisk your water and egg in a separate bowl. Then combine the two, stirring completely. Take your potatoes, they should be cool by now, and roll them in your batter (make sure your hands are washed).Slowly drop your potatoes in the oil. When the fries are brown, drain them and remove them again, placing them back on the rack to cool. Then remove the toothpicks.

Step 6: Honey Mustard Sauce

For the honey mustard sauce simply measure out and mix your ingredients well.

Step 7: Barbecue Sauce

 Simply mix your ingredients and cook for 10 mins.

Step 8: Eat

To eat, simply make sure the fry is cooled, dip in the sauce you want and bite. I'm sure you can figure out the rest.
