My favorite kind of cake is lemon

And I LOVE the lemon pound cake at Starbucks

I get it every time and I get it so often that I started making it myself

But I had this gluten-free flour laying around in the kitchen so I decided to try and make a gluten-free iced lemon pound cake just like Starbucks

I tried it and it tastes even better than Starbucks

It also is very easy to make

But most importantly it tastes delicious because it is a rich and buttery cake even though it only has a bit of oil

Who wouldn't want to make their own iced lemon pound cake just like Starbucks

And its gluten-free!

Step 1: Ingredients

3/4 cup oil (vegetable or canola)

1 1/2 cup sugar

4 eggs

2/3 cup lemon juice

1/4 cup lemon zest

2 1/4 cup gluten-free all purpose flour

1 tsp baking powder

Step 2: Steps

Beat together the oil and sugar until combined in a medium bowl

Crack all the eggs in a separate bowl and add the eggs in one by one into the sugar mixture, beating

Next pour in the lemon juice and mix together

Add in the fresh lemon zest

My lemon zest was orange because I used an orange lemon, but you can use lemon zest instead

Next, sift in the flour and the baking powder and add into the large bowl

Next carefully stir together all the ingredients together

Making sure not to over mix

Prepare a loaf pan by lining and greasing the pan with oil and parchment paper

Pour the batter into the loaf pan and bake at 350 degrees Fahrenheit for 20-30 minutes or until a toothpick inserted into the middle comes out clean

Step 3: Making the Glaze

Now you can choose to make a glaze

I like mine without a glaze

Ingredients:

1 cup powdered sugar

lemon juice

Steps:

In a medium bowl, add your powdered sugar and pour in a tablespoon at a time of lemon juice

Mix thoroughly until you get a smooth glossy but sort of runny consistency

Make sure it is still thick enough

When the cake is cooled, pour over the cake and let it rest for an hour in the fridge before serving

Step 4: Results

I am very happy with how this lemon pound cake turned out

Usually gluten-free baked goods are sort of dry, but this cake was fluffy and moist (sorry for using the word moist :)

Delicious!

Rich and buttery, with a zing of lemon!

I just love this gluten free lemon pound cake

I will definitely be making this cake again
