In this instructable, my two nieces and I will teach you how to make Gluten and Dairy Free Flaxseed Muffins with Dark Chocolate Chips. A special treat, since both my nieces can not have gluten. While on vacation in Atlanta, they wanted to make a recipe with me. This is a quick and easy recipe to make. Follow the easy steps below or watch the video or do both! My nieces are adorable in the video. :) Enjoy!

Here is a recipe for a Gluten Free Flour Mix. You substitute this flour cup for cup of regular flour - the below makes about 3 cups worth.

  • 1 1/4 cups brown rice flour
  • 3/4 cup sorghum flour or buckwheat flour
  • 2/3 cup cornstarch
  • 1/4 cup potato starch
  • 1 tablespoon + 1 teaspoon potato flour
  • 1 teaspoon xanthan gum

Combine all the ingredients together and store in an air-tight container in the refrigerator.

Muffins Recipe:

  • 1 1/2 cups of Gluten-free flour mix
  • 1 1/2 cups of ground flaxseed
  • 3/4 cups of brown sugar
  • 1 Tbsp of baking powder
  • 3/4 tsp of nutmeg
  • 1 1/2 tsp of cinnamon
  • 2 cups of almond milk
  • 1 egg

***Preheat the oven to 350 degrees F.

Video Tutorial:

Step 1: Cream the Bown Sugar With the Egg

First we will go ahead and preheat our oven to 350 degrees F. Now let's cream the brown sugar with the egg.

Step 2: Add Almond Milk and Mix

Next let's go ahead and pour the almond milk in, and mix.

Step 3: Add the Dry Ingredients and Mix Together

Now let's combine our gluten-free flour mix, ground flaxseed, baking powder, cinnamon, and nutmeg. Now stir it all together with a spoon or wooden spoon.

Step 4: Optional (add Chocolate Chips)

And if you like sweets like the girls, and when I wasn't looking, they added a cup of dark chocolate chips (dairy free).

Step 5: Fill Up the Paper Cups

After the chocolate chips are folded in, fill up the paper cups about 2/3 to 3/4 depending on the size you want your muffins to be. Then put them in the oven and bake them for 30 minutes at 350 degrees F.

Step 6: Have a Dance Party While You Wait. (Optional)

Leah wanted to have a dance party while we waited for the muffins to be done. Feel free to have one as well. :) or you know, just watch some tv or something.
