Hi! I'm Emily and this is my first Instructable. I am 12 and I am very excited to present my recipe for gluten-free chocolate chip raisin zucchini bread. Gluten-free bread!? That's right! I really wanted to make a bread that my friend Isabel could eat. She is gluten free, so I wanted to make her something special. That is where this recipe originated. Step 1: Gather Ingredients
For this recipe you will need:
- 3 small zucchini
- 1 cup of oil
- 3 eggs
- 2 tsp of vanilla extract
- 3 cups of gluten free all purpose baking flour with xanthan gum
- 1 cup of suger
- 2 tsp of baking soda
- 1/4 tsp of baking powder
- 1 tsp of salt
- 1 tbsp of ground cinnamon
- 1/4 tsp of ground cloves
- 1 cup of chocolate chips
- 1 cup of raisins
Step 2: Prepare Oven
Preheat oven to 350 degrees
Spray two 8 x 4-inch pans with baking spray
Step 3: Grate Zucchini
Now, grate all zucchini into a large bowl
Step 4: Add Wet Ingredients
To the same bowl, add oil, eggs,and vanilla
Step 5: Dry Ingredients
In a separate bowl, combine flour, sugar, baking soda, baking powder, salt, ground cinnamon, and cloves
Step 6: Add Dry to Wet
Add the dry ingredients to the wet and mix well. I recommend adding a little at a time. If you add too much at a time it makes it very difficult to stir.
Step 7: Chocolate and Raisins
Now add chocolate chips and raisins and mix well
Step 8: Pans
Separate dough evenly between the two pans and spread tops to even out the loaves
Step 9: Bake and Enjoy!
Bake for 45-60 minutes depending on the size of the loaf you plan to make.
For smaller loaves bake for less time
