Golden Tomato, Green Olive, Artichoke, and Mozzarella Salad

Summer calls for a traditional salad of tomatoes, mozzarella, and basil. With green olives, marinated artichoke hearts, and a substitution of golden cherry tomatoes, this caprese salad deviates from the norm. The fresh colors offer a pleasing palette to the eye and the flavors bring a new touch to your summer table.

Golden Tomato, Green Olive, Artichoke, and Mozzarella Salad

serves 4


1 cup golden cherry tomatoes, sliced

1/2 cup artichoke hearts, halved

1/4 cup green olives, pitted

4 oz mozzarella, cut into wedges

3 tablespoons basil, finely sliced

2 teaspoons olive oil, to drizzle



1. On a large plate, place the golden cherry tomatoes, artichoke hearts, green olives, and mozzarella.

2. Garnish with basil, olive oil, and salt.
