Introduction: Grilled Corn on the Cob With Cilantro Lime Butter

Cook your corn on the cob right on the grill alongside the rest of your dinner, and add a little extra flavor with cilantro lime butter.

Step 1: Ingredients

To make grilled corn on the cob with cilantro lime butter, you'll need:

Ingredients

  • fresh corn on the cob
  • 1 stick of butter, room temperature
  • 1/2 a lime
  • bunch of cilantro
  • pinch of kosher salt

Tools

  • grill
  • large bowl full of clean, cold water
  • kitchen knife
  • cutting board
  • small bowl
  • fork
  • tongs

Step 2: Soak Your Corn

Fill your large bowl with clean, cold water. Place corn in bowl, silk side down. Soak for about 10 minutes.

Step 3: Prep Your Butter

Prep butter for additional ingredients by creaming with a fork. Add a pinch of kosher salt and mix well.

Step 4: Prep Lime and Cilantro

Wash lime. Roll on the counter or cutting board with the palm of your hand - this helps release the juice from the lime when you squeeze, so don't be afraid to apply some pressure! You'll only need half the lime for the butter mixture - cut the 2nd half into small wedges for extra lime on your corn when finished.

Rinse cilantro well. Pull off leaves and throw away the stems. Chop into small pieces. You'll want to end up with about 3 tablespoons worth of cilantro. My family really enjoys cilantro, so we use a lot, but since cilantro is a strong flavor, this can absolutely be adjusted to taste.

Step 5: Add the Green

Add the juice of 1/2 the lime and chopped cilantro to the butter / salt mixture.

Step 6: Mix

Mix butter, salt, lime and cilantro together. Mix well!

Step 7: Grill That Corn!

Place soaked corn on the cob directly on the top rack of your grill. You'll want to keep it away from the direct flame or the husks will dry out and catch fire.

Rotate with tongs every 5 minutes or so, for a total of about 20 minutes. Husks will become brown and crispy. Remove from grill with tongs when done.

Step 8: Unwrap, Butter and Enjoy!

Peel back husks very carefully - corn will be HOT!

Slather with cilantro lime butter, squeeze a lime wedge over the whole cob, and enjoy!
