Introduction: Home Made Ghee - Clarified Butter From Fresh Milk Fat

What is ghee?

Ghee is a form of highly clarified butter that is traditionally used in India cooking, and it is a good alternative to cooking oil and is often used in Indian / Asian Cooking.

Ghee contains several fat-soluble vitamins, including vitamins A, E and K.

And if you search in internet, there is huge documents about Ghee, its uses, benefits.

Overall, I will recommend to use Ghee instead of any oil for cooking.

So, lets start making it, from scratch.

Step 1: Preparing and Storing Fresh Milk Fat

I do not use ready made butter which available in the market to make ghee.

So What i do?

2 litter milk is daily need of our family.

so, here are the steps I follow

  1. Boil the milk in low flame
  2. let it cool
  3. refrigerate it whole night
  4. in the morning, there is very nice thick layer of fresh milk fat.
  5. collect this milk fat in a container, and store in refrigerator
  6. I store like this for 7 to 10 days, for a good amount.

Step 2: Preparing Ghee

after 7 or 10 days, when I collect a good amount of milk fat, I prepare ghee from it.

Preparation of Fat:

  • take out the cream from refrigerator
  • wait, till it have the room temperature
  • Mix the milk fat well add little warm water for mixing

  • then, take it in a mixture, gently grind in batches, for 1 to 3 minutes , till I see butter floating at the top
  • collect the butter
  • repeat the process for whole cream.
  • Separate butter from the buttermilk. This buttermilk can be used in drinking / preparing curries etc.

Preparation of Ghee:

  • Heat butter in a wide heavy bottom pan

  • Butter starts melting, keep the flame low, otherwise, butter will burn and land with a bitter taste.

  • Stir the butter occasionally, so that the bottom does not burn, it looks like a oily liquid.

  • slowly, its colour will change from white to golden brown , and after some time, its observed that, all solid parts settle down in the bottom and yellowish oil-like liquid comes to the upper part
  • Also, by this time, it has a very nice aroma of fresh ghee.
  • Once all the liquid part and solid part separated, put the flame off, let it cool..

Step 3: Filter the Ghee

  • Once the ghee little cool, take a strainer, (shown in the figures)
  • Pass the ghee through a strainer or filter
  • collect the pure ghee in a clean container.
  • Ghee can be stored for up to a year or more 9 if more than 3 months keep it refrigerator)

Step 4: Store and Enjoy the Ghee

Now, Prepared ghee can be stored in stainless steel container or glass container

Step 5: Uses: Indian Ghee

There are many many uses of ghee.

  1. Ghee is very good substitute of cooking oil, can be use everyday cooking,it has a High smoke point
  2. In india, We use ghee for diya (a small bowl shaped lamp made of baked clay / metal / brass etc)
  3. Good for skin
  4. can be use for toast, making kheer, paratha (Some pics added, which I made using my home made ghee)
  5. It also contains several fat-soluble vitamins, including vitamins A, E and K

  6. Ghee provides essential Healthy Fats

  7. Many home remedies can be prepared from ghee
  8. and more other uses...

So, lets start using GHEE...
