Homemade Energizing Date Bites

About: I work in the mental health field as a community based clinician in both outpatient setting and mobile crisis. I also have a duel career in health and wellness doing massage and personal exercise training. ...

Aside from having all kinds of vitamins and nutrients, dates are a tasty snack that will keep you energized on the go. Great to bring along outdoors hiking and camping as they increase appetite control (and they taste great!).

Step 1: Materials

Pitted dates

Unsweetened coconut

Vitamix or other strong blender/food processor

Wax paper

Step 2: Coconut

Add 1-2 cups of shredded coconut to your blender to make it finer. The smaller the pieces the better it will stick. Remove from blender and set aside.

Step 3: Dates

Add all of your dates to your blender and slowly increase the speed, you want a pasty result. 10-15 seconds should be enough. Scoop the date puree and move to a small bowl.

Step 4: Balls

Use a spoon or your hands to make small balls. Roll the balls in the coconut and then set aside on wax paper.

Step 5: Freeze

Freeze your date balls for a few hours to harden, then they can either be left in the freezer or moved to the fridge. Should stay good in the fridge for a couple of weeks, longer in the freezer.
