Do I have the option of restoring only a partial of the entire ROM? I just deleted a lot of photos to save more storage on my device and made a backup previously. And now I am looking for a way to recover the deleted files. But I don't want a fully recovery.

You must root your device and yes you can backup an OEM device. You can update after backing up, but to keep that update while switching ROMs, you must backup after the update.

Hey, sweet tutorial! A few questions though. Can you back up the OEM OS, I.E. Touchwiz? And then restore it, if I choose to? And, do I need to root my device first?
