Khichdi is a whole some comfort food prevalent in india for centuries. it has ingrained as part of our culture and celebrated as a festival every year in January. We love khichdi because it’s easy to prepare and easy to digest food. Its main ingredients are rice, lentils, vegetables, turmeric, asafoetida, cumin and clarified butter.
khichdi is a must food after a special yogic process called ‘shankh prakshalan' or stomach cleansing. In Indian household khichdi has special place especially for its flexible recipe. My mother learned it from my grandmother and I learnt it from my mother. Today I share with you the same recipe that I am fond of.

Step 1: Gather the Ingredients!
The following are the ingredients:-
# 1 bowl rice.( Its capacity is 300ml)
# 1 medium size tomato.
# 1/2 bowl lentils( green gram split, pigeon peas)
# 1 medium size onion.
# 2 green chillies.
# 1 inch ginger piece.
# 2-3 garlic clove.
# 2 small potatoes
# 1 bowl gram green peas.
# 1 tsp turmeric powder.
# 1 tsp of vegetable spice.
# 1 tsp of cumin seed.
# Pinch of asafoetida.(optional).
# 2 tsp of clearified butter( ghee ).
# Salt to taste.
# 700 ml water.
* For the topping 2-3 tsp of clearified butter( ghee ).
“ Utencils involved in this dish”
# Pressure cooker.
Step 2: Wash and Soak the Rice and Lentils
# Step 1:-
Rinse both in a strainer thoroughly. After you are done with washing of rice and lentils ,you have to take a bowl and fill it with water. Now soak the rice and lentils in this bowl then keep this aside and do the next process.
Step 3: Chopping of Veggies
In this following step you will be needing a knife and vegetables.
Step: Take your vegetables which includes tomato, onion, ginger, garlic, potatoes and green chilies then grab the knife and chop them into small pieces. Now keep these pieces separately.
Step 4: Heat the Clearified Butter
Step: Take your wok and place it on the stove with medium flame. Now pour 2 table spoons of clearified butter.
Step 5: Adding Some Sparks in Process
Step: Take the chopped pieces of cumin seeds, green chillies, gingrer and garlic and add them in heated clearified butter.
# After the clearified butter is heated enough in medium heat( around 2 minutes). First add cumin seeds.
# Then after it add green chillies.
# Now add nicely chopped ginger.
# Then add sweet little chopped garlic.
* Now mix them with spatula well.
“This procedure will make the dish more delicious and healthy”
Caution: while adding cumin seed, see that you don’t add anything before cumin seed start to sizzle.
Step 6: Adding More Veggies
Step: Now take chopped onions ,tomatoes and potatoes.
# Now first add beautifully chopped onions in wok.
# Then add chopped tomatoes.
# third add chopped potatoes.
* After adding all veggies in the Same way, mix it well with spatula.
Step 7: Adding More Veggies
So guys this is the last part of adding veggies.
Step: Now take green peas, turmeric powder and vegetable spice.
# Now add green peas in the wok.
# Then sprinkle 1 tablespoon of turmeric powder.
# Third sprinkle 1 tablespoon of vegetable spice.
* After following this way mix it well.
Step 8: Adding Mixed Veggies Into Pressure Cooker
Ok guys after mixing all added veggies in the wok you have to follow below step:-
Step:- Take the wok in which there are mixed veggies , then with the help of spatula take this mixture and sprinkle in the pressure cooker.
Step 9: Add Rice and Lentils in Pressure Cooker
Guys you remember? The rice and lentils we left aside in a bowl after washing it.
Step: So, in this step we have add that rice and lentils in the pressure cooker. Then pour 700ml of water and salt(to taste) after adding rice and lentils.
Step: Guys now place the cooker on medium heat and at the first whistle of cooker turn off the stove and leave the cooker as it is so that it can release it’s inside press naturally.
Step 10: Now Serve It Hot!
After your meal is cooked take it out of the cooker and place it on a beautiful plate. Then pour few drops of clearified butter on your dish. You may also add yogurt/curd in it for taste.
