Introduction: How to Make Olive Oil Cake
After hearing about Olive Oil Cake, I knew I had to make it also and give it a try. Granted mine didn't turn out as beautiful as the one from the website. It was still delicious and next time I decide on making it, I'll add a bit more almond extract to give it that extra kick! I liked this cake, it was dense, smooth, soft, and oily.

Step 1: Ingredients & Tools
- 3 large eggs (150 grams)
- ¾ cup (150 grams) granulated sugar
- ½ cup (112 grams) extra-virgin olive oil
- ½ cup (120 grams) whole milk
- ½ teaspoon (2 grams) vanilla extract
- ¼ teaspoon (1 gram) almond extract
- 1½ cups (188 grams) all-purpose flour
- 1½ teaspoons (7.5 grams) baking powder
- ½ teaspoon (1.5 grams) kosher salt
Step 2: Spray and Line Pan
Begin by preheat your oven to 350°F (180°C). Then spray an 8-inch round cake pan with baking spray and line bottom of pan with parchment paper.
To cut out a circle that fits the baking dish "perfectly" fold the parchment paper into 4. Then Place it over the dish and cut a semi-circle on the corner of the parchment paper. Once you unfold it it will be a circle that fits on the bottom of the dish.

Step 3: Beat Eggs and Sugar
In a large bowl, add the sugar and the 3 eggs. Beat eggs and sugar at high speed for 30 seconds.
Step 4: Add Olive Oil
Add the oil in a slow, steady stream, beating until combined. Do not pour all at once!
Step 5: Add Milk & Extracts
Add milk, beating until combined. Then reduce mixer speed to low and beat in the vanilla and almond extracts.
Step 6: Combine Wet and Dry Ingredients
In a medium bowl, whisk together flour, baking powder, and salt. Gradually add flour mixture to egg mixture, beating until combined, stopping to scrape sides of bowl.
Step 7: Stop and Smell
Remember to enjoy the amazing smells :-) even though I was somewhat disappointed because it didn't smell as strong as I expected it.
Step 8: Pour the Batter
Pour batter into your prepared pan.
Step 9: Bake!
Bake until a wooden pick inserted in center comes out clean, 30 to 33 minutes.
Step 10: Remove and Cool
Let cool in pan for 5 minutes. Cut the edges of the cake to remove it from sticking to the pan. Remove from pan and let cool completely on a wire rack.
Step 11: Enjoy!
Brush with fresh olive oil just before serving. Store at room temperature wrapped loosely in foil or plastic wrap. Enjoy!
The fun thing about this is that it ends up looking like a Pacman once you take a slice out of it :-)
