Ok, so this is awesome. I mean really awesome! It’s quick, filling and oh my god delicious! A crunchy toasted flour tortilla filled with crumbled sausage, scrambled egg, melted cheese and spring onions. I really don’t need to embellish, the ingredients speak for themselves! Making a wonderful breakfast, brunch or lunch, whenever you decide to enjoy this beauty, you’ll sink into world of heaven…

Here is what you will need to serve 1.

  • 2 Sausages
  • 2 Eggs, beaten
  • Salt & Pepper
  • 2-3 Spring Onions, sliced
  • 30g Cheddar Cheese, grated
  • 1 x Flour Tortilla

Step 1: Making the Filling

Heat a non stick frying pan over a medium heat. When the pan is hot, squeeze the sausage meat out their skins straight into the pan. Crumble up the sausage with a spatula & fry until cooked. (3-4 minutes.)

Step 2: Making the Filling

Add in the beaten egg, a good helping of salt & pepper and the sliced spring onions.

Step 3: Making the Filling

Continue to fry until the egg is scrambled and cooked. (1-2 minutes.)

Step 4: Assembly

Tip the egg mixture into the middle of the tortilla. Keep the heat on, we’ll be coming back to the pan.

Top with the grated cheese.

Step 5: Folding

Fold the wrap up in triangles until the filling is completely encased.

Step 6: Toasting

Place the quesadilla fold side down in the hot frying pan and cook until golden and crispy. Flip it over and repeat.

Step 7: Tadah!

Serve immediately and fill your face!

I’m not kidding, this breakfast quesadilla really does taste as good as it looks. It’s SO satisfying! You can change up the flavour a little too if you like. Instead of using a plain tortilla I used garlic & coriander. The type of sausage you pick will hugely influence the flavour too. Spice it up a little with some chilli flakes or even tone it down with a bit of sour cream. It’s entirely up to you!

Wow! I think I will try that recipe of yours as well, soon! ^^

Um... May I ask... What kind of sausage/meat did you use?

Thank you! I believe I just used some pork sausages. Simple is best I find. You can use whatever sausages take your fancy/you have in the fridge though :)

it looks great, could be prepared earlier for a brunch, and finished toasting right before serving!

Add the chopped onion before the egg, together with a bit (or a lot) of finely chopped serrano or jalapeño pepper, when the onion is translucent add the eggs.

preheat one side of the tortilla but do not toast, flip and then add the filling, it'll be easier to fold and avoid possible breakage, after it is filled and folded, you can toast to taste.

if no pepper, I'd just a sprinkle of Tabasco/Cholula/El Primo green sauce.

Replace the sausage or bacon with Salmon or Tuna fillet bits, fried in olive oil for a healthier Quesadilla! (and remove the egg yolks too). In addition to the great spring onions, I would add some bits of red pepper. Amclaussen.

On the positive side, I've seen the ad on TV for the "Square Copper Pan" that is quite similar. The finished product could be added on to with Salsa, Sour Cream, Guacamole, etc. Looks really good.

The only way to improve this is with bacon. Lots of bacon. I'm adding quesadillas to the shopping list as we speak. Thanks for an awesome brekkie idea!
