    That electrical outlet right next to your upper right hand burner makes me a bit nervous have you ever melted that when you're cooking something on a high setting or gotten food stuck in it? also this is an interesting process with separating and then folding back in after whipping to soft peaks I'm going to try it right now! I'll post later on how it turns out. Also as a side note I remember hearing that the salt actually breaks down the proteins in the egg causing them to be less fluffy I don't know how reliable the source is but maybe try by adding the salt at the last moment. But that's just me.
