Introduction: I Scream Extra for Extra Ice-Cream

Today I am going to make two delicious citrus flavored ice-creams. I have done three other instructables on how to make ice-cream and then more flavors. The links for them all are here: How to make Ice-cream, I Scream for Ice-cream and I Scream More for More Ice-cream In the ''how to make ice-cream'' instructable you will find how to make the ice-cream base that I use in all of the ice-creams that I make.

So lets get making!

Step 1: LOL Ice-cream (Lemon Orange Lime)

You will need:

  • 1/2 cup cream
  • 1/2 cup base
  • 1 Orange (zest and flesh)
  • 2 teaspoons lemon juice
  • 1 teaspoon lime juice
  • 1 teaspoon icing sugar

Step 2: Orange Rind

Wash the orange then using a zester remove the zest and cut it up finely. Cut the orange up and remove the skin from the flesh and blend the flesh up until it is a puree. Then push the orange puree though a sieve so you only end up with the juice.

Step 3: Whipping and Adding Ingredients

Wipe the cream and icing sugar together until it is soft peaks, then add the ice-cream base, orange juice, lemon juice, lime juice and orange zest.

Step 4: Folding

Using a rubber scrapper or spatula cup down the center of the mixture, then go around the side about half way and over the top. Keep going until is well combined, folding keeps all of the air that you created when you whipped the cream in the mixture so it is light and airy. Cover with cling film and leave in the fridge until cold.

Step 5: Orange and Ginger Ice-cream

You will need:

  • 1/2 cup cream
  • 1/2 cup base
  • 30 grams crystalised ginger
  • 1 orange
  • 1 teaspoon icing sugar

Step 6:

Cut up the orange just like before and blend it up, push it though a sieve so you are just left with the juice and set aside.

Step 7: Whipping and Adding

Whip the cream and sugar until soft peaks then add the orange juice and crystallized ginger.

Step 8: Folding

Cut down the middle then around the side about half way then fold it over the top and keep going until the ice-cream mixture is well incorporated. Cover with cling film and leave in the fridge until completely cold.

Step 9: More Folding

When the ice-cream mixtures are ready you will need to give them another few folds as they may have separated which is fine just keep folding until they are nicely mixed together again.

Step 10: Churning

Pour one of the ice-cream mixtures into an ice-cream maker and churn until the consistency is like soft serve, put in a container and leave in the freezer to firm up. Wash the maker then repeat with the next one.

Step 11: Finished and Ready to Eat
