Summer is coming soon, and already the kids are clamoring for ice cream. Store bought ice cream sandwiches get boring quickly, and don't always include ingredients we would chose for our loved ones. These homemade ice cream sandwiches are made with your choice of ice cream, sorbet, sherbet, or gelato and are a big hit with kids of all ages. They add a bit of color and fun to any picnic or cookout and a very easy to make!

Step 1: Slicing Ice Cream

Since the ice cream is in a pint container, it is almost the same diameter as the pizelles. With the ice cream (or raspberry sorbet, as pictured) very cold, simply slice down through the container with a very sharp knife, making your ice cream slices as thick or thin as you like. The bottom 2 or 3 slices will be smaller, but that won't be a problem.

Step 2: Sandwich and Sprinkle

Gently (very gently!) press the ice cream slice between two pizelles. By the time you get down to the last 2 or 3 smaller ones, it will be easy to press them so the sandwiches are filled. Run your finger or a spoon along the edges to smooth them, and add sprinkles if you wish for a bit more color and fun.
