Introduction: Individual Veggie Quiche Cups To-Go

Ingredients

1(10 oz.) package frozen chopped spinach, thawed and well-drained (frozen or fresh)

7 eggs or 1 3/4 c. egg substitute

3/4 c. shredded cheddar cheese

1/4 c. finely diced red bell pepper

1/4 c. finely diced mushrooms

1/4 c. finely diced onion

Step 1: Step 1:

Preheat oven to 350. Line 12 muffin cups with foil baking cups; spray with non-stick cooking spray. Set aside. It is important to use foil baking cups, that way the Quiche will not be burnt on the bottom.

Step 2: Step 2:

Wash and chop up all ingredients, including the spinach (can be frozen or fresh).

Combine all ingredients in a bowl and mix well.

Step 3: Step 3:

Divide the mixture evenly between the muffin cups. Bake at 350 degrees for 20-25 minutes, until set and a knife inserted in the center comes out clean.

This step can be preformed with either a spoon or an ice-cream scoop.

Step 4: Step 4:

Remove from foil liners and reheat in the microwave when you're ready to eat them!

P.S since this recipe makes so many quiches, extras can be stored in the freezer, and reheated in either the microwave or oven when ready for consumption.
