Introduction: Inside-Out Baklava (Gluten Free, Raw)
Being gluten free doesn't mean you have to sacrifice taste. This is a delicious, simple gluten free and raw dessert recipe using only whole ingredients. Even the most skeptical foodie will love these. They are the best bits of Baklava without the gluten!
Step 1: List of Ingredients
10-12 dates (Medjool if possible)
2-3 tablespoons of pistachios (roasted and salted)
2-3 tablespoons of walnuts
zest of one lemon
2-3 teaspons of honey
Shell the walnuts and pistachios if needed (using pre-shelled nuts makes this recipe even easier!). I recommend using roasted, salted pistachios as the salt complements the sweetness of the honey and dates beautifully.
Chop the nuts so that they are medium to fine coarseness.
If your dates still have the pits, you can remove them now.
Grate or zest the rind of one lemon.
Put the chopped walnuts, pistachios and lemon zest into a bowl.
Add the honey and mix all the ingredients together until mixture starts to stick together.
Stuff the dates with the filling and enjoy!! Bet you can't eat just one!
If there are any dates left, store them in an airtight container in the refrigerator. They should keep for at least a week. Best eaten at room temperature.
You can easily double, triple or quadruple this recipe.
You can also experiment with other flavour combinations. Try almonds, cashews or pecans, orange zest instead of lemon and even maple syrup instead of honey. Be creative, have fun and enjoy!!!
