Irish Potato Bread

Leftover mashed potatoes makes the best and most soft bread ever. Put your potatoes to work to create a favorite sandwich bread.

Step 1: Ingredients

2 lbs of bread flour

1.5 tsp yeast

1.5 tsp salt

2 cups of water

1 cup of mashed potatoes

Step 2: Directions

Mix ingredients in a counter top mixer on low speed for 3-5 minutes.

Dough should be soft but not sticky.

Cover mixing bowl and let it rise till it reaches the top (about an hour).

Divide dough into 3 pieces and shape into a ball. Let them rest covered for about 10minutes.

Flatten dough into a rectangle and begin fold the dough. Use pictures as a reference above.

Place dough into a greased bread pan and let rise till it reaches the top of the pan (about an hour).

Bake in preheated oven at 350F for 30 mins. Release from pan onto a cooling rack and let cool down before cutting into.
