My wife is Diabetic Type 2 and recently I had to rush her to the Hospital's Emergency Room. Her blood sugar dropped to 40 and she went unconsious. She needs to limit her carbohydrates and eat small snacks instead of big meals to keep her blood glucose low (80 to 160). It's a big job buying things she can eat. Some things like fish, cheese, baked chicken and turkey are all low in carbs, but there is a limited amount ways to easily prepare them. We have always enjoyed the Reuben and the grilled cheese sandwiches. This is a little of both and it's easy and fast to prepare. Let's get started:

Step 1: INGREDIENTS

1 - Slice of Orowheat Rye Bread, cut in half .............15g..............3g


1 - Slice of Oscar Mayer Turkey Breast ...............1g..............8g


1 - Slice of Kraft American Cheese .................2g..............3g


⅓ - Can of Bumble Bee Smoked Salmon ...........12g..............7g


1 - Tablespoon Tartar Sauce ...............2g...............0g


TOTAL........32g.............21g

Step 2: MAKING THE SANDWICH

Place the slice of Rye bread on a plate and slice it in two.

Add the turkey and the cheese. Trim the cheese to fit bread.

Add the 1/3 can of smoked salmon to the other half.

Spread the tartar sauce over the salmon. This helps keep the salmon flakes from falling out.

Fold the turkey & cheese half over onto the salmon half.

Step 3: GRILL IT

Spreading on a small amount of butter helps toast the bread, improves the texture, warms the contents, and melts the cheese. Grill it on a cast iron grill or skillet.

Mash it down while it is being grilled as you would a Reuben sandwich.

Cut it diagonally and it's ready to eat (see 2nd photo). Pickled okra or dill pickle slices go good with it. Potato chips are also good, but not for the diabetic. Enjoy
