Introduction: Lava Chocolate & Orange Sponge Pudding Cake

Soft Chocolate sponge cake on top has a surprise oozing pudding underneath.

It's like 2 desserts in one!

Who doesn't love Chocolate? Although this dessert looks decadent, it's not!

A touch of coffee enhances this chocolate flavor...read on if you want to see how it's low in calories....

Sponge pudding has been a staple in most North American homes since the '50's...because it is inexpensive and has a sauce built into the dessert.

I hope this becomes one of your favourite desserts.

Step 1: Ingredients

You'll need:

4 tbsp. margarine

3/4 cup sugar

2 cup unsweetened Almond Milk or dairy milk

1 cup flour

1 tsp baking powder

5 tbsp cocoa powder

1 tsp instant coffee

zest of 1 orange

1 lg egg, beaten

Step 2: Prep:


Preheat oven to 350F

Grease or spray 4, 1 cup ramekins

In a medium saucepan melt margarine, 1/2 cup sugar, 2/3 cup milk, zest and coffee. Stir to dissolve the sugar. Cool to the touch.

Whisk the egg into the liquids.

Sift the flour, baking powder and 1 tbsp of cocoa powder together.

Sprinkle onto the liquids and whisk to mix, the mixture will be lumpy.

Evenly distribute into ramekins.

Stir the remaining sugar and cocoa powder together.

Sprinkle over cake batter. Pour the remaining milk over the batter.

*When baking it will magically mix together creating a sauce on the bottom.

Place on a baking sheet to catch any spills and bake for 40-45 min until the liquid sinks and the cake rises. Remove and allow to cool for 5 min. The cake will drop.

Sprinkle with icing sugar and a scoop of Ice-cream if you'd like.
