Our holiday ham served us well, but left us with a healthy chunk of leftover meat with which to get creative. We've used ham for Leftover Bean Soup before, which is pretty yummy, and we've used leftover ham with bacon to flavor Potato Hash before. But this time we had both ham and pineapple from our baked holiday ham, so we decided to put a new twist on an old hash favorite.
The result, a quick and simple dish with a slightly tropical kick that provides a great way to enjoy leftover ham and pineapple!

Step 1: Ingredients
For this Ham Hash recipe, we used:
- About 2 cups of diced ham
- 1/2 white onion -diced
- 2 potatoes
- 1 cup frozen corn
- 1/2 cup chunk pineapple
- olive oil
- salt and pepper to taste
Start to finish, the dish took about 30 minutes. We served with green beans for color and flavor balance.
Step 2: Dice and Fry Potatoes
The potatoes will take the longest to do, so start with those, dicing them and frying in a little olive oil over medium heat until golden brown. You can season with a little pepper, but go light on the salt, because your ham probably has plenty of that. We like to add a little Old Bay seasoning to our potatoes, which give them a nice color.
Step 3: Dice & Saute Onion
While your potatoes are cooking, dice and saute your onion in a 2nd pan, in a little olive oil until translucent and aromatic.
Step 4: Add Chopped Ham to Onion
While you're sauteeing your onion, chop or dice about two cups of ham, and then add that to the pan with the onion.
Step 5: Combine
Let your potatoes cook until crispy and cook the ham and onion until it starts hopping a bit, the point at which most of the ham is slightly crisp. Then add the ham and onion to the potatoes and stir to combine. Keep a low heat under the pan.
Step 6: Add Corn
Add about a cup of frozen corn and combine well. Then cover and cook over low heat about 5 to 10 more minutes until corn is heated.
Step 7: Saute Pineapple
In the empty pan, toss in your pineapple and stir and turn until lightly browned.
Step 8: Plate & Serve
Serve with green beans, with the pineapple on the side, and enjoy your leftover Ham Hash!
