Intro: Lemon Coconut Rice (Vegan)
This is a very easy recipe for coconut lemon rice - while there are different variations and all sorts of ways you can make it, this one just calls for a few ingredients:
- 1 cup jasmine rice (rinse and soak rice for 15 minutes, then drain to use)
- 1.5 cups boiling water
- 3 teaspoons coconut flakes
- Juice from 1/3 a lemon
- Pinch of turmeric and pinch of salt to taste
Method: Bring a pot to a high heat and add your rice to the pot. Stir for about 1 to 2 minutes until all water evaporates. Then add your 1.5 cups of boiling water, the salt and turmeric. Bring to lowest heat possible and cover for 17 minutes. Be careful if the pot starts to boil over - in that case, open the lid for a moment. Otherwise keep it on. After 17 minutes, open the rice and gently mix in the coconut flakes and lemon juice with a fork. Cover, let ingredients sit together for 5 more minutes. The rice is ready to serve!
This rice goes very well with all kinds of dishes - eggplant, chickpeas, cauliflower - you name it!
