Step 1: Ingredients
1/2 cup sugar 1/2 cup margarine or butter,softened 1 tablespoon water 1 teaspoon vanilla 2 eggs, separated 1 1/2 cups all purpose flour* 1/2 teaspoon salt 1/4 teaspoon baking soda 2/3 cup of Finley chopped nuts( optional) Lemon filling
Step 2: Lemon Filling
Beat 1 cup powdered sugar,2 teaspoons margarine or butter, soften,1 teaspoon grated lemon peel and 1 tablespoon plus 1 1/2 teaspoons lemon juice.
Step 3: Mixing
Mix all except lemon filling, then divide dough into halves. Shape each halve into rolls. Wrap and refrigerate at least 4 hours.
Step 4: Bake
Heat oven to 400* cut the rolls into 1/8 an inch Bake until edges are brown which might take 6 minutes Now put lemon filling on one cookie and put another on top so it looks like a sandwich. If you like mix nuts with eggs white and put on the cookie before cooking....I didn't do:/
