My lemon meringue PI pie, made with short crust pastry which i blind baked on 170 degrees celcius , home made lemon curd and meringue. I first made the pastry, then the lemon curd with lemon juice of 4 lemons. and the zest of it. combined it with 6 egg yolks butter and cornflour. the meringue is made of 6 egg whites and sugar. baked in the oven for 35 minutes on 120 degrees celcius.
