Eating pasta is not only delicious but healthy. Many people misthink that pasta is a high caloric meal. This is wrong. The calories are behind the cream, butter and other ingredients we use while preparing the pasta, not the pasta itself.
This time I am sharing a super yummy and healthy recipe: Pasta with a portion of protein and vegetables under the aromatic and fresh flavor of lime... sound delicious? You have to try it!
For the protein you can add chicken, pork, beef and even salmon. The vegetables are cooked with no water to ensure they keep all their properties.
Step 1: Ingredients
To prepare this delicious pasta (4 portions) you need:
- 1/2kg pork chops
- 3 zucchinis
- 1/2 big eggplant
- 500gr pasta
- 2 limes (only the zest)
- water (to cook the pasta)
- pinch of salt
- 2.5 spoons olive oil
*optional: you can add green, yellow and red pepper
Step 2: Peel and Chop Vegetables
Wash the vegetables. Peel the eggplant. Cut the eggplant and zucchinis into small squares.
Step 3: Cook Vegetables in a Pot
Cook eggplant and zucchini squares in a pot. DO NOT add water.
You just need to add 2 spoons of olive oil to the pot and keep it covered. Cook over low temperature. Stir occasionally.
Step 4: Cook the Pasta
Cook pasta in water. To get a moisturized and full of flavor pasta add a pinch of salt to the boiling water and 1/2 spoon of olive oil.
Step 5: Cook and Chop the Pork
In a separate pan, cook the pork chops and chop it.
Step 6: Mix It, Add Lemon Zest
Once you have the three part cooked: 1. Vegetables, 2. Pasta and 3. Protein, mix them and add the lemon zest. It is important to add the lemon IN THE END otherwise the pasta will take a bitter flavor.
Step 7: Serve and Enjoy
Serve pasta and enjoy!
