Introduction: Lion's Mane Burger

Lion's Mane Burger is a meat-free gourmet burger prepared with freshly harvested lion's mane mushrooms, which are packed with umami flavor and a tender texture reminiscent of lobster. Sweet, caramelized onions compliment the savory flavor of the seasoned mushroom, while spinach wrapped around both ends of the umami reminds one of the fresh nutrients this burger brings with each delicious bite.

Perhaps the finest part of this burger is its simplicity. The recipe can be completed in less than 20 minutes, with minimal preparation. By sharing my Lion's Mane Burger recipe with others, I hope to provide a tasty and time-friendly alternative to meat-based meals.

Supplies

Ingredients

  • 4 oz. Lion's mane mushroom
  • 1 Brioche bun
  • 1 Yellow onion
  • 6 oz. Spinach
  • 2 tbsp. Soy sauce
  • ½ cup Sesame oil
  • 1 pinch Black pepper
  • 2-3 pinches Chili flakes
  • Optional decor: Sesame seeds, Toothpick with flag

Cooking Materials

  • Paper towel
  • Teflon pan
  • Ladle
  • Chopping board
  • Cutting knife

Step 1: Fry Mushroom and Caramelize Onions

Remove water from the mushroom by squeezing it against a paper towel. Lather soy sauce on both sides of the mushroom and heat the pan to medium heat for two minutes. Add sesame oil and seasoned mushroom into the pan and tilt the pan so that the mushroom is submerged in the oil. Flip periodically with the ladle until the mushroom turns crispy and golden brown.

Using the same pan, spread the oil so the whole pan is covered (add additional sesame oil if necessary). Slice the onion into fine moon-shaped pieces and add sliced onions to the pan along with black pepper. Stir the onions until golden brown.

Step 2: Burger Assembly

Assemble Lion’s Mane Burger in the following order: bottom bun, spinach, fried mushroom, caramelized onions, chili flakes, spinach, top bun (sprinkle sesame seeds on top bun and add a toothpick with flag for decor).
