Introduction: Low Carb Parfait

This frozen treat is made with erythritol and thus convenient for a low carb diet.

Ingredients:

  • 100grams raspberries
  • 350grams strawberries
  • 2 egg yolks
  • 150grams erythritol
  • 300ml whipped cream
  • 1 vanilla bean
  • 2 table spoons lemon juice
  • Ice cubes from the freezer

Supplies

  • Blender
  • Handmixer
  • 2 big bowls, 1 of them smaller
  • 1 small bowl
  • Icing bag
  • Whisk
  • Mortar and pestle
  • Silicon moulds or loaf pan

Step 1: Purée the Fruits

Prepare your mise en place (the French world for having all your ingredients prepped and measured) in advance.

Weigh 100grams of raspberries (these were frozen).

Weigh 250 grams of strawberries, cleaned.

Put the raspberries in a blender.

Purée the raspberries.

Purée the strawberries.

Put both results into the smaller of the big bowls.

Step 2: Mix the Rest

Separate the 2 eggs from the yolks and put the yolks into the small bowl.

Cut the vanilla bean alongside and scratch the pulp into the small bowl or use a half spoon of vanilla extract.

Add 140grams of the erythritol.

And mix it smoothly.

Step 3: Warm Water Bath

Bring some water to the boil and put it into the biggest bowl.

Put the bowl with the pureed fruits into the bowl with hot water.

Add the sugar and egg yolk mix.

Whisk for 5 minutes until creamy.

Step 4: Cold Water Bath

Remove the hot water and get some ice from your fridge.

Put the ice into the biggest bowl.

Put the bowl with the mix into the bowl with ice and stir until cool.

Step 5: Whipping the Cream

Take 300ml of whipped cream.

Beat the whipped cream.

If you see this, you made butter and can throw it away (it was a hot day).

Your whipped cream needs to be stiffly.

Add the whipped cream to your mix.

And stir until smooth.

Step 6: Freezing

Use either silicone moulds or put parchment paper into a loaf pan.

Fill in the mix, but not until the top, it will gain some size.

Put it at least 4 hours into the freezer.

Step 7: The Sauce

Allspice is perfect with strawberries, crush it and purée the rest of the fruits.

Mix the crushed allspice and puree.

Add 10grams erythritol, 2 table spoons of lemon juice and mix with the puree.

Fill it into an icing bag or similar and store in the fridge untily you want to serve the parfait.

Step 8: Serving

Take the parfait out of the freezer.

Crumble some popcorn and put it on the parfait, add the sauce and some fresh peppermint leaves.

Or add fresh fruits and popcorn.

Or add other shapes for visual effects. Enjoy the frozen treat!
