Hey momoluvers it's momo and lately I've been obsessed with this extremely simple cake pops recipe. Let me give you a little background:
I was searching through the wonderful land that is pinterest and I stumbled upon this amazing recipe for a chocolate cake in a mug on Chocolatecoveredkatie. She said it was very simple; it only takes a few minutes to prepare and it's apparently healthier than other recipes for microwave chocolate cake (how has this gone on so long and I've just discovered it!?) I made this cake once and it turned out awesome! Once i went back to make it again, I made a powdered sugar icing for a little more sweetness. As the icing poured over the cake, It kind of started mushing and turned crumbly. I immediately thought of cake balls. I joyously started crumbling the cake (with clean hands of course) and made the cake ball batter. And that folks, is how I created the wonderful cake balls that I would love to show to you. Step 1: Supplies
There are three basic parts:
1) 1 tablespoon cocoa powder
2) 3 tablespoons flour
3) 2 tablespoons sugar
4) 1/4 teaspoon baking powder
5) 1/8 teaspoon salt
6) 2 teaspoons coconut oil (or butter)
7) 3 tablespoons milk
8) 1/2 teaspoon vanilla
1) 4 tablespoons powdered sugar
2) 1 teaspoon milk
1) 2 tablespoons brown sugar
2) 1/2 teaspoon milk
3) 1/8 teaspoon vanilla
4) 1/2 teaspoon oil
Step 2: Combine Dry Ingredients
Okay, so this step is simple, just put together all of the dry ingredients, carefully measuring each item.
Step 3: Wet Ingredients
Put the wet ingredients in a separate bowl. mix the wet and dry together. Add an egg and if needed, put in more flour
Step 4: Bake the Cake
Put about half of the batter into a mug and cook it in the microwave for about 1 minute. Put it on a plate to cool.
Step 5: Icing
Bake the other half of the batter and while the cakes cool, make the icing with the ingredients listed in the supplies introduction.
Step 6: Crumble and Roll
When the cakes are half-cool, crumble them up with your fingers. Put the icing into the crumbled cake mixture and mush everything together. Then take small handfuls of cake and crumble it up, compressing it with your fingers.
Step 7: Cool Dem Off
Put the finished cake balls into the fridge too cool for about 15-20 minutes.
Step 8: Cover in Chocolate Melts
I don't have a picture of this step, but after the cake balls cool, Dunk and coat them in candy melts.
Step 9: Finished!
