My chinese collegue who gave me this recipe said that this is one of her favourites.This is the first time I have tried out chinese cooking.Oh! i couldn't believe that it turned out so well and tasty. My husband is thankful to Instructables because he gets delicious food after I joined this lovely site.Actually it is he who does most of the cooking at home as kitchen is not my favourite place.BUT now I spend more time in the kitchen trying out different dishes for the sake of instructables. :D

Step 1: Ingredients
200 gr rice vermicelli
oil to fry
2 tble spoon water
2tble spoon white vinegar
2 tble spoon fish sause
2 tble spoon tomatoe sauce
1/4 cup sugar
100 gr bean sprouts
2 spring onions
2-3 red chilies (option)
2-3 tble spoon chopped roasted peanuts
A few fresh chilli and extra peanuts to garnish
OPTION : This is the original recipe, but you can add a little more spring onions and bean sprouts if you like.
Step 2: Measure
Measure the exact amount given in the ingredients chart.
Step 3: Fry
Place the vermicelli noodles in a large plastic bag and break them into small handful size pieces .( Doing this in the bag helps stop them spreading around your kitchen)
Heat about 5 cm of oil in a large pot or a wok ( A wok is very good for this )When the oil is hot enough throw in the noodles one handful at a time and cook until they are puffed.Remove cook noodles and drain the oil on paper towels.The noodle can be cooked up to 1 hour in advance.
Step 4: Prepare Omelet
Beat the two eggs together and make a thin omelet.I put both eggs together and it was a bit too thick,so you could make the omelet one by one or use a large frying pan. Roll the omelet in the pan itself. Once it is cooled cut into narrow slices.
Step 5: Cut & Chop
Skin the peanuts and chop them into small bits and pieces.Sorry I forgot to click a picture of the chopped peanuts.
Spring onions should be thinly sliced into lengthwise(about a finger size) Fresh red/green chillies are an option.I like my food to be a little bit hot so in all my cookings it is added.If you want to use, cut the chillies also in to lengthwise.
Heat the wok over a low heat and pour the vinegar, water, fish sauce, and tomatoe sauce.Then add the sugar and stir in low flame until it dissolves.
Step 7: Cook
Now add the cooked vermicelli noodles,bean sprouts, most of the spring onions and chillies (if using) and the chopped peanuts.These has to be cooked on very very slow flame.Stir until the noodles have soaked up all the liquid.last of all toss in the sliced Omelet and remove from the heat.
Garnish with the balance spring onions and chopped peanuts.
