Introduction: Meringue and Coffee Liqueur Semifreddo Topped With Chocolate Shaving,strawberry Preserve,kiwi and Cherry

I was looking for a frozen dessert that i had never heard about before and i found the recipe for Italian Semifreddo, which is an Italian semi ice cream cake. I liked that this recipe requires very few ingredients and i do not have to put in much effort or time and my electric mixer and freezer perform the major role. I have made few changes to suit my family and my taste buds. This recipe calls for Meringue which can be bought in the store or local bakery. But since i have never made Meringue before I thought of making it from start. I am extremely happy with the outcome of the Meringues and the mini Semifreddos. Please note, i have used coffee liqueur in this recipe, in case you would like to make this dish for your kids, you could use instant coffee powder(2 tbsp) mixed with water(2 tbsp) instead of the liqueur.

Step 1: Ingredients and Materials Required to Make Meringue

Yields : 12 Meringues

Ingredients Required :

  • Egg Whites - 2
  • Superfine sugar - 7 tablespoons
  • Vanilla extract - 1/2 teaspoon
  • Salt - Half of 1/4 teaspoon

Materials required :

  • Large baking tray
  • Electric beater
  • Large mixing bowl
  • Silicon spatula

Step 2: Steps to Prepare Meringues

  • Preheat oven to 275 degrees Fahrenheit.

  • In a large bowl with a hand held electric mixer, whisk the egg whites until they become a little frothy, add the salt and mix it in until combined.

  • Slowly add the sugar and whisk the mixture until the egg whites become thick and very glossy and the sugar has dissolved (pinch the mixture in between your fingers and see if you feel the sugar, if you do, keep mixing)

  • With either two small spoons or in a piping bag fitted with a large round tip, form little dollops on the baking sheet a couple inches apart.

  • Bake them for 1 hour and 15 minutes making sure to rotate the baking sheet half way through baking. Turn the oven off and let them cool and dry out with the oven door shut for 3 hours.

  • Store them in an airtight container at room temperature.

Step 3: Ingredients and Materials Required to Prepare Meringue and Coffee Semifreddo

Yeilds : 7 cupcake shaped Semifreddos

Ingredients required :

  • Heavy cream/Heavy whipping cream : 1.5 cup
  • Coffee flavored liqueur : 2.5 to 4 tablespoons
  • Dark/Milk Chocolate : 50g
  • Meringues : 6-7

Materials required :

  • Muffin baking tray
  • Cupcake liners
  • Electric beater
  • Large mixing bowl
  • Silicon spatula

Step 4: Steps to Prepare Meringue and Coffee Semifreddo

  • Place the chocolate bar in the freezer for 15 minutes, so it is easier to shave. With the help of knife cut the chocolate bar into thin shavings or pieces and keep aside.
  • In a large bowl with a hand held electric mixer, whisk the cream until it gets stiff peaks, add the liqueur, crushed meringues and chocolate shavings.

  • Slowly mix using the silicon spatula only until combined. Do not over mix.

  • With either two small spoons or in a piping bag fitted with a large round tip, fill the cupcake liners placed in the muffin tray and level using a knife and freeze overnight.

Step 5: Plating the Semifreddos

  • Remove the Semifreddos from the cupcake liners
  • Place the shaved chocolate on top,drizzle homemade strawberry preserves on the 4 sides, place one piece of kiwi and sweet cherry on top.
