Intro: Mini Vegan Pizzas
Mini Vegan pizzas are so easy to make - all you need are some vegan english muffins, some pasta sauce, vegan cheese* and any other toppings you want to put on them (Mushrooms, spinach, garlic, tomatoes, bell peppers, olives, onion, etc). These can be made in a toaster oven or conventional oven.
Wash, dry and slice all veggies. Set aside.
Slice or grate vegan mozzarella. Set aside.
Break apart vegan English Muffin into two halves.
Spread a thin layer of pasta sauce on each half of vegan English Muffin.
Sprinkle or place a thin layer of vegan mozzarella on top of vegan English Muffin.
Top with favorite veggies - spinach, black olives, tomato, green onions, garlic, tomato, etc.
Carefully place Mini Pizzas on a baking tray and toast in a toaster oven 3-5 minutes or in a preheated conventional oven (400 degrees F for 3-5 minutes) and cook until vegan English Muffin is crispy and/or vegan cheese has melted.
* A Note about vegan cheeses: many of them don't melt unless at extremely high temperatures, so you may want to melt it beforehand in a saucepan first to make sure it melts and the rest of your mini pizza doesn't turn into a pile of black ashes...
