Mint Chocolate Chip Smoothie




Intro: Mint Chocolate Chip Smoothie

There is nothing worse about being a vegan than craving your favorite ice cream. I've found a healthy, delicious way to satisfy those old cravings... 

Step 1: Things You Will Need

  • About two tablespoons of chocolate chips
  • A handful (about 12 leaves) of fresh mint leaves picked from your garden (or bought at the store!)
  • A couple of handfuls of spinach
  • 1/2 cup silken tofu (Must be silken!)
  • About two frozen bananas
  • A splash of soy milk 

Step 2: Make the Smoothie!!

Start by adding the chocolate chips first to break them up. 

Soften your bananas slightly by microwaving them for about 10 seconds.

Then, add the mint, spinach, tofu, soy milk and bananas to your blender (or mixing device of choice). 

Blend until smooth!

    im quite curious about the tofu being added to this mix. what does it do exactly?

    I understand this is a response over a year later, but the tofu is for protein :)

    In my experience, this works fine without the tofu, and you could use mint extract instead of mint leaves.

    I tried this recipe, and actually love it!

    I used almond milk, and the 66% cacao ghiardellhi chocolate chips instead.

    In the future I'll probably use just one banana, more almond milk, I really didn't like the thick consistency.
