In this Instructable, I am going to show you how to make banana bread. This easy moist homemade banana bread recipe is awesome. If you have a bunch of really ripe bananas, don't throw them out, that is just silly, make banana bread with them! Banana bread is the king of the quick bread in my opinion. It is really easy to make, if I can do it, you can do it. Let's get baking!

Step 1: Ingredients and Tools

Ingredients:

  • 1 1/2 cups of all-purpose/plain flour (185g)
  • 1/2 tsp. salt (2g)
  • 1 tsp. baking soda (4g)
  • 1/4 tsp. cinnamon (1g) (optional)
  • 1/2 cup softened butter, unsalted or salted (113g)
  • 1 cup of white granulated sugar (200g)
  • 2 large eggs
  • 1 tsp. vanilla extract (5ml)
  • 1/2 cup sour cream (123g)
  • 3 to 4 really ripe medium bananas

Tools:

  • Bowls
  • Spatula
  • Hand mixer or stand mixer
  • Whisk Fork
  • 5x9 bread pan, greased and floured or sprayed with cooking spray

Step 2: Mix Those Dry Ingredients

Preheat the oven to 350 F/176 C. In a small bowl whisk together the flour, salt, baking soda, and cinnamon. The cinnamon is optional.

Step 3: Cream Butter Sugar

Now in a large bowl add the softened room temp butter and the sugar and cream them together with a hand mixer or stand mixer, or wooden spoon. Then add the eggs and vanilla extract and mix. Scrape the sides of the bowl with a spatula throughout this whole batter making process.

Step 4: Sour Cream

Next, add in the sour cream. Mix it until just combined. The sour cream will add moistness to the bread. If you don't have sour cream you can make it with this homemade sour cream recipe.

Step 5: I Am Going Bananas for Banana Bread

Next, take your really ripe bananas, 3 to 4 medium bananas for 3 really large bananas, and mash them up with a fork or I like to use a meat tenderizer. Then add them to the batter and mix them in.

Step 6: Finish the Banana Bread Batter

Now dump in all of the dry ingredients in the bowl and mix them in.

Step 7: Bake Bake Bake

Next, pour the banana bread batter into a 5x9 greased and floured bread loaf pan. Use butter or shortening. You may also spray it with cooking spray. Bake it on the middle rack for 50 to 60 minutes until it is golden brown on the top and a toothpick comes out clean when poked in the middle. Check it at 40 minutes. If it is getting to brown you can loosely cover the top with aluminum foil. Once it comes out of the oven allow it to cool completely in the pan.

Step 8: Remove and Serve

Now, just use a butter knife or cake spatula and go around the edges of the pan. The bread is probably already loose if you greased and floured it. Next, cut into that bread and serve up a slice! I like to spread butter on my and sometimes strawberry jam as well. Enjoy! :)
