Mutton Kuzhambu (Tamil: குழம்பு) is a dish from southern part of India.

Mutton Kuzhambu will give your taste buds a well deserved break from normal routine Mutton gravy.

Step 1: Ingredients

Grinding Ingredients

  • 1 tbsp Poppy seeds
  • 1 Onion medium size chopped
  • 1 tbsp coriander powder
  • 1 tbsp Garam masala powder
  • 5-6 Garlic pods
  • 1 bay leaf
  • 5-6 dry red chilli
  • 1 tbsp pepper corn seeds
  • 4-5 cloves
  • 1 cinnamon stick
  • 1/2 to 1 small bowl of grated coconut
  • 1 tbsp fennel seeds (Saunf)

Cooking Ingredients

  • 600 g mutton
  • 2 tbsp of ginger garlic paste
  • 1/2 tbsp turmeric
  • 1 tbsp cumin seeds
  • 1 tbsp red chilli powder or Kashmiri lal mirch Salt as per taste
  • 1 tbsp mustard seeds
  • 6-8 curry leaves
  • 1 tbsp black gram skinned (White Urad dal)
  • 1/2 tbsp of cumin powder
  • 1 chopped onion
  • 1 chopped tomato

Step 2: Cooking

Add 1-2 tbsp edible oil

Once heated, add onions & garlic.

Cook till golden brown

Once onions start turning brown add grated coconut

Cook further for 30-40 seconds

Turn off the heat and remove the pan

Put the roasted spices in a grinder.

Add fried onions and garlic.

Add coriander and garam masala powder.

Dry Grind. In a pressure cooker take 4-5 tbsp edible oil.

Once heated, add mutton pieces.

Shallow fry for around 4-5 minutes or till pieces start changing the color.

Keep stirring in between and make sure it is not sticking to the base.

Once they start changing color, take out the mutton pieces leaving oil behind.

Add Mustard seeds in same oil and cook on low medium heat for 30-40 seconds.

Add cumin. Add curry leaves, onion and cook till onions start turning brown.

Add little salt to make process faster.

Add Ginger Garlic paste and cook for 30-40 seconds or till raw smell goes away.

Add tomatoes and green chilli ( Optional ).

Mix well and let it cook for 2 minutes.

Add remaining spices.

Mix it and let it cook till oil start separating or for 40 seconds to 1 minute on Medium low heat.

Add mutton pieces and cook for around 4-5 minutes on medium low heat.

Keep stirring occasionally so that it is not sticking to the base.

Add our grinded spices.

Mix well. Leave it to cook for 2-3 minutes.

Add some water upto level of mutton pieces to generate the whistle.

You can add more water as per your gravy need.

Close the cooker and wait for 5-6 whistles on low heat.

After the whistles allow the steam to escape naturally.
