Introduction: Ginja Ninja Slice

This is slice with a kick! From when I first tasted this I was hooked. I've tweaked the original recipe and now it goes further to feed my ginger-loving family and they always ask for more! From the chunks of cystalised ginger to the chewy oats and buttery icing it's delicious and super easy to make.

Step 1: Ingredients

Gather your ingredients...

BASE

300g butter

1 1/2 cups brown sugar

3 Tbs golden syrup

1 1/2 cups white flour

1 1/2 cups shredded coconut (dessicated)

3 cups rolled oats (oatmeal)

2 tsp ground ginger

100g crystallized ginger, chopped

3tsp baking powder

ICING.

150g butter

3 Tbs golden syrup (possible substitute: corn or maple syrup although more runny)

4 tsp ground ginger

2-3 cups icing sugar

EQUIPMENT

Large bowl

Microwave safe bowl

Pan

Scales

Large spoon

Step 2: Prepare

First the oven,

then the tin,

wash your hands,

and then begin!

Turn on the oven to 180 degrees Celcius (350F),

put baking paper in a 38 x 25cm tin,

then wash your hands and begin.

Step 3: Wet Ingredients (Base)

Put your 300g butter, 1 1/2 cups brown sugar and 3 Tbs golden syrup in a microwave safe bowl and put it in the microwave for 3 minutes on high (it might pay to put a large plate on top of the bowl to stop the butter splattering your microwave)

Once the butter has just melted, mix it and put it to the side.

Step 4: Dry Ingredients (Base)

This next part you can do while the butter is melting. Take your 1 1/2 cups white flour, 1 1/2 cups shredded coconut, 3 cups rolled oats, 2 tsp ground ginger, 100g (3.5 oz) crystallized/glazed ginger and 3 tsp baking powder and put them in a bowl and mix them thoroughly. There is no particular order to put them in as they are going to be mixed up anyways!

Step 5: Mix It Together

Take your wet and dry ingredients and mix them together well. Mix in a folding motion as that way you will get everything from the bottom and will not discover flour pockets when you are putting it in the tin.

Step 6: Baking

Now grab your tin with baking paper and tip the mixture in. Using your hands push it right into the corners, spreading it out evenly. Put it in the oven at 180C for 15min. At 15 min check the slice, if it's golden brown it's cooked. Take it out of the oven. But don't just stand there while it's in the oven make the icing!

Step 7: Making the Icing

Take 150g butter, 2-3 cups Icing sugar, 3 tbsp golden syrup and 4 tsp ground ginger.

Place the butter and golden syrup in a sauce pan and place on the stove on medium heat. Once the butter and golden syrup have melted put in the icing sugar and ground ginger. Keep mixing until combined (If the Icing is too thick and not a pouring consistency add some more butter, as slightly runny icing will make it easier to spread out on the base.

Step 8: Icing the Base

By this time the base will be finished cooking, take it out of the oven if you have not already done so and while it's still hot pour the icing on the base and spread it out using a hot knife or spatula. Once you have spread the icing out wait until it has cooled before cutting it.

Step 9: Enjoy!

Cut your slice using a hot knife and serve! Enjoy :-) Hope you get a kick out of it!
