Introduction: No-Bake Cookies GLUTEN FREE

Want to whip up a quick snack that you can store and bring out whenever you want it? These chocolate no-bake cookies are delicious morsels with optional hints of coffee and peanut butter mixed in. They do not require to be baked, and are EGG AND GLUTEN FREE.

The beginning process does require heating in a saucepan in order to dissolve the sugar, but that is pretty much all the heat you'll need. The rest is just as simple as adding ingredients, shaping, and cooling. And then comes the most important step, which is eating.
If you are looking to cut down on sugar, you could try substituting honey instead of the sugar, but it's up to you. Now for a little unrelated poem I wrote before the recipe (scroll down for recipe).

Step 1: Ingredients


¾ cup sugar

½ cup brown sugar

⅓ cup almond milk

⅓ cup butter

¼ cup cocoa powder

2 teaspoons instant coffee

1 ½ teaspoons vanilla extract

¼ teaspoon salt

⅓ cup peanut butter

3 cups gluten-free rolled oats

Step 2: Sugar Stuff

In a saucepan, bring sugars, almond milk, butter, instant coffee, and cocoa powder to a boil. Let boil for a minute, then remove from heat.

Step 3: Other Stuff

Add the peanut butter, vanilla, and salt.

Step 4: Oats

Add rolled oats, stirring until completely incorporated.

Step 5: Cool and Enjoy!

Use a cookie scoop, and place formed cookies on a tray. Insert in the fridge for half an hour or so until set.

    I grew up on these cookies though mom's version of cookies didn't have peanut butter or coffee in them. Eventually mom would ask. "What do you want for your birthday"? and the reply was a coffee can full of no-bake's. Walnuts work in the recipe, but my sister was allergic to tree nuts so it was more for me.

    in the very first step one of the ingredients you mix in is instant coffee, however you do not have instant coffee in the ingredients list. How much instant coffee are you supposed to use?

    Thanks for letting me know! I seems as though I have forgotten to list instant coffee in the ingredients list :P As it was supposed to be optional. But I'll update that now...It is 2 teaspoons instant coffee, I believe. Sorry about that

    A relative with a gluten sensitivity told me that oats contain gluten. Do you need to find a specific kind of oats to be gluten free?

    Good question! Oats are naturally gluten-free, but many are commercially processed and so are contaminated with small amounts of gluten - so if you are gluten intolerant you should buy only GLUTEN FREE OATS specifically. (i edited the ingredients list to specify)
