Introduction: No-Bake Lime Cracker Pudding

Easy, no-bake lime cracker pudding is a creamy, scrumptious and absolutely refreshing dessert!

With just 4 ingredients, it is the perfect make-ahead sweet ending to any party or special occasion!

You need just basically 4 ingredients; condensed milk, heavy cream, lime and salty crackers! Making a dessert could not be easier!

Step 1: INGREDIENTS NEEDED:

2 cans condensed milk (14 oz each)

2 cups heavy whipping cream

Salty Ritz Crackers

Juice of 4 to 6 limes (about ½ cup), if you cannot get lime, use lemons instead

Zest of 2 limes/lemons

Step 2:

Combine condensed milk, cream and lime juice in a chilled bowl.

Step 3:

Beat with a hand mixer or stand mixer until slightly thickened. This could take about 3 to 4 minutes.

Another easy step is to blend in a blender jar and then refrigerate for a couple of hours. It thickens beautifully!

Step 4:

Take a wide dessert dish and start layering the pudding and crackers .

Spoon a little of the pudding mixture on the bottom of the dish; gently place salt crackers over the pudding in a single layer to cover fully.

Step 5:

Layer some more pudding over the crackers and alternate crackers and filling until the pan is full and the top layer is pudding.

Sprinkle some more lime/lemon zest over it.

Step 6:

Cover well and refrigerate or chill for at least 6 hours or best overnight!

The longer you let it set, the softer the crackers become. They soak up the sweet pudding to get a lovely, soft, cake like texture. This actually tones down the sweetness of the pudding to a decadent sweet, salty, tangy divine dessert!

Step 7:

Spoon out portions to serve.

Serve chilled!

Step 8:

Have leftover cream mixture? Then serve them as dessert dip with more crackers, fruits or even some salty potato chips!! Doesn’t that sound delicious?

Step 9:

Make sure the cream and condensed milk are well chilled.

If you cannot find any limes, you can substitute with lemons.

Adjust the amount of lime juice or even lemon juice to suit your taste.

Try to use only crispy, buttery salt crackers like Ritz.

The more the crackers soak in the pudding, the better the flavor and texture becomes!

You can easily halve this recipe to make in a smaller bowl/dish.

This is a perfect dessert to serve in individual dessert glasses too.
