Introduction: Noodle Cake

This recipe was inspired by my two-year old who likes to combined a number of unusual items in her own kitchen. The result is something similar to Kugel. It is sweet, easy to make and consists of items probably already in your kitchen.

Step 1: Ingredients and Preparation

I use Ramen in my version but probably any cooked pasta would work.

  • 2 packets of Ramen (we're not using the flavor packets)
  • 2 eggs
  • 1 8 oz. can of sweetened condensed milk
  • 1 teaspoon of vanilla extract
  • Some cinnamon to sprinkle on top

Preheat the oven to 350°F and boil some water for the Ramen.

Step 2: Cook the Ramen

You don't need to cook the ramen too much, because its already cooked and you are going to bake it. The goal is to get it soft. I cooked mine for 1.5 minutes.

Afterward rinse it with cold water. You don't want it to cook the eggs when you mix them together.

Step 3: Mix Other Ingredients

Beat the eggs.

Add the condensed milk.

Stir in the vanilla.

Step 4: Pour in Pan

You could probably make these in a full cake pan but I did it as cupcakes. If you use a cake pan you will probably need to cook it a little longer.

Add the ramen to the cupcakes tin first.

Pour over the wet ingredients.

Sprinkle with cinnamon.

Step 5: Bake

Bake for 20 minutes.

Let cool and eat!
