Introduction: Norwegian Enchilada

This is how I make enchilada in Norway. It's a quick and tasty meal I can recommend. I have entered the "Some Like It Hot" contest so if you like the customized enchiladas please vote for me :)

Step 1: Find the Ingredients

I'm not very concerned about exact quantities so this instructable is a little "decide as you go on". What I put in these enchilladas is what I usually enjoy eating, but I think its fun to put in e.g. brie instead of cheddar sometimes and you can decide how hot you want the spice mix. I guess homemade salsa and home made spice mix is better, but this is my getting home from work and need something quick type enchillada. See picture for ingredients.

Step 2: Filling Up the Tortillas

  1. Cut the chicken into small pieces.
  2. Mix chicken and onion into a pan.
  3. Fry the chicken and onion.
  4. Add spice mix and salsa.
  5. Fry a few minutes.
  6. Prepare the tortilla with creme fraiche.
  7. Add cheddar cheese on the tortilla as well, or whatever cheese you have available.
  8. Add the meat to the tortilla and make a neat roll.
  9. Place on a tray

Step 3: Customizing Each Enchilada

Now customize the enchilladas with the names of those eating it or whatever else you can think of! Use a cheese that have a nice color when in the oven. I used a traditional Norwegian cheese for this.

Step 4: Enjoy

I set the oven at 225°C (440°F) and have the enchiladas in there for about 15 minutes. It depends on the cheese on top and what color you want on the custom cheese writing and how crunchy you want the tortillas. My tip would be to keep an eye on it while it's in the oven.

When ready, find your enchillada and enjoy!
