Introduction: Orgasmic Veggie Tacos / Sort Of!

This is an old favorite of mine. Mostly all veggie except for the butter, cheese, and sour cream. These can be replaced with tofu crappy tasting stuff you can find at your local hippie food store.

Step 1:

There are 4 main steps. Avocado stuff. Wine drinking. Main filing stuff. Finial assembly.

First get 2 ripe avocados
1/3 med. onion diced up
1 clove of garlic
3 heaping table spoons of Salsa Suprema
! large bottle red wine, 13.5% alcohol minimun
1/2 teaspoon salt
1/2 teaspoon black pepper, fresh ground
2 table spoons sour cream
Good time to take a big dose of wine!

Step 2:

Set the avocados free from their skin and stone, chop up the onion, press the garlic on top.
Sprinkle on the pepper and salt. Smash up the stuff in the bowl, try to smash and turn over the mix. You want the onion and garlic well mixed in.

Step 3:

Swill some more wine to clear out the onion and garlic! Or make up your own excuse.

Step 4:

Next mix in the salsa and sour cream, some people mix in some lime or lemon juice to keep it green looking and fresh. Store in fridge till later. More wine!

Step 5:

The main filler is made of sliced mushrooms, bean sprouts, rest of onion, garlic and butter.
2- 8oz. packs of sliced mushrooms
2 cups of bean sprouts
1 large garlic clove, pressed
2/3 med. onion diced
1 stick of butter

Sip some more wine! Are we having fun yet?

Step 6:

Melt butter over medium heat and add onion and garlic cook 2 minutes.
Add bean sprouts, after a few minutes add half of mushrooms. Let the 'srooms cook down the add the rest.

Step 7:

Good time to check your heat and adjust so you don't burn the stuff. Sip some wine, stir and let cook till all looks cooked

Step 8:

Top up your wine and pour some wine for you friends we are almost there.

Step 9:

Fry up some taco shells corn or wheat both work well with this mix.
Put about a table spoon or so of main filler in then some of the avocado mix.
Then some tomatoes, cheese and lettuce.

Step 10:

Should look something like this. Wires in back ground not part of food! You can change around the garlic, salsa, sour cream to taste. Some like hotter salsa more of this more of that. It's a good dish to play with.

Step 11: The Tech Stuff!

All cooking on a Heartland Oval wood stove. All other energy from solar power Trace system. Go green or go extinct, it's your choice! More wine please.

    Well you clearly haven't been to the hippie store lately! :-D Tofutti "Better Than" Sour Crem and Cream Cheese are both awesome. Earth Balance Margarine is amazing. And even though I do use some dairy, I use Vegenaise from Follow Your Heart brand, it's better than Hellmans. Even some of the veggie cheeses aren't bad. Most dairy substitutes are not as over-the-top delicious as some regular cheeses etc., but they beat the low-fat dairy versions all hollow. If you are having cholesterol issues you owe it to yourself to at least try these substitutes. And yes, brand name matters. Vegenaise brand is delicious, whereas Nayonaise brand is just congealed nastyness. So it pays to try different brands of these items.

    Sorry I can't do Soy and wheat, bad problems with both. We only eat unpasteurized dairy when possible. Most is from our own goats and cows. Most people that have dairy problems are allergic to cows milk or what is in it. "What you eat, is what you are" also applies to livestock too. Most people would run screaming from the store if they new what is most dairy products. Home made butter will not clog your arteries. The problem is that pasteurizing chances the structure of cholesterol into something your body can't handle. You can Google pasteurized vs unpasteurized milk and other foods, and also check out homogenized vs unhomogenized milk. Dairy does get a bad name from a lot of people, but we who grow and make our own food or buy only organic when we can. We are a puzzlement to the doctors. We just shouldn't be this healthy. It drives them crazy. I'm fifty eight and have no signs of any artery problems, Ofcourse eating mostly veggies also helps.

    oh, by the way, I'm diggin' the stove; is it hard to keep a constant heat?

    YES IT IS A GREAT STOVE. We had a Stanley stove before and this one is larger and cooks better then the Stanley. It supplies all our heat, cooking and hot water in the winter. We live completely off the grid. Four cords of wood a year. In the summer we use a small two burner propane stove like in a camper for cooking and solar hot water.

    mmmmm looks mighty good. I'm gonna have to try this one. I do gotta say though... tofu, (although it is hippy food) it is great to eat. ;-)

    I didn't understand well the wine part... I'll just have another glass, just to be sure! ;-)

    I enjoy your choice of words: setting an avocado free from it's skin. I'm gonna go free a banana from it's peel right now. :)
