Introduction: Oven Roasted Asparagus

Early spring (late winter here in California) , for me, is time for asparagus. Often, when I am boiling or steaming, I miss the point of crispness and doneness. I like this recipe because it consistently hits that sweet spot.

You will need a bunch of asparagus (about 2 lbs.) oven at 450 degrees, 1/4 cup grated parmesan cheese, 1 Tbsp. lemon juice, 1/4 cup chopped radishes, 2 Tbsp. snipped chives, 2 Tbsp. olive oil, 1/4 cup melted butter (not shown) and a 3 quart baking dish.

Step 1: Prepare Asparagus

Before you remove the rubber bands from the bunch, cut off the bottom root portion.

Take the bands off and carefully rinse in clean cool water and pat dry with a paper towel.

Step 2: Place in Oven

Make sure the oven is pre heated to 450f.

Place asparagus in baking dish, drizzle oil, sprinkle cheese, place in oven for 15 minutes. Lightly toss a couple of times during the roasting with tongs. Be careful not to get burned!

Step 3: Prepare Garnish

Sorry, the photo for the prepared garnish didn't happen. Wash and trim the radishes then finely chop. Rinse and snip chives. melt the butter being careful not to burn. Add lemon juice

Mix together. If the butter starts to harden again, you may have to reheat.

Step 4: Add Garnish

When the 15 minutes has elapsed, remove the dish from the oven. Check with a fork to see if they are done enough, oven temperatures very. Spoon garnish over the asparagus as in the photo, or any way you like.

Serve and enjoy. Yum!
