Step 1: Preparation
Wash the chicken very well then place it in a clean bowl.
Sprinkle olive oil, salt to taste, parsley leaves, spices and lemon juice over it.
Use your hands to rub in the ingredients properly in and out of the chicken.
Stuff the chicken with some potatoes and place in a baking dish.
Step 2: Roasting
Place the chicken in a baking dish and allow to marinate for at least 1 hr.
Place the chicken in a pre-heated oven of 150-200oC.
Roast until the chicken is properly cooked.
Once chicken is properly cooked, bring out from oven and allow to cool down.
Serve garnished with lettuce, roasted potatoes, fresh tomatoes and onions or as desired.
