Introduction: PAHADI CUCUMBER RAITA
Special dish with strong flavors. Very delicious and unique dish from Northern part of India.
Step 1: Ingredient List
- Yogurt or curd: 500 gm
- Cucumber: 2 (Large)
- Salt: 1 tablespoon or as per taste
- Turmeric: 1/4 tablespoon
- Roasted Fenugreek Powder: 1/2 tablespoon
- Roasted Cumin Seeds Powder: 1 tablespoon
- Roasted Black Mustard Seeds Paste: 2 tablespoon
- Green Chilly: 3 (Small)
- Red Chilly: 2 (Small)
- Coriander Leaves: 1/2 bowl
Step 2: Chopping and Peeling
Its very important to chop off cucumbers top so that there is no bitterness left in it. After this peel off the cucumbers. Once you have done take a grater and then grate both the cucumbers.
Step 3: Squeezing and Blending
Now the next step is to squeeze all the water from the grated cucumbers and place it on a separate bowl. After this you whisk the yogurt nicely, you can also use a hand blender but it's very important to have a good uniform consistency. After this mix all grated cucumbers into the yogurt.
Step 4: Mixing
Now add 1/4 tablespoon turmeric powder, 1/2 tablespoon roasted fenugreek powder, 1 tablespoon roasted cumin powder, 1 tablespoon salt and black mustard seeds paste. Mix it well in the bowl so that all ingredients are uniformly distributed.
Step 5: Garnish or Decorate
Now garnish with chopped green and red chillies and coriander leaves. Mix it properly and now your dish is ready :)
Note: You can use the cucumber water as a Juice. Put it in a nice martini glass, garnish it with coriander and have a sip. I am sure you will enjoy this :)
