Paleo Almond Joy Thumbprint Cookies

Introduction: Paleo Almond Joy Thumbprint Cookies

These paleo Almond Joy inspired grain-free treats are almost too cute to eat, but you can’t say no to chocolate and coconut!


  • 2 cups almond flour
  • ¼ cup coconut oil
  • 1 egg
  • 3 tbsp maple syrup
  • 2 tsp vanilla extract
  • pinch of salt
  • ½ tsp baking soda
  • ¼ cup shredded unsweetened coconut
  • 1 bag of chocolate chips (use Enjoy Life or similar brand if strict paleo)

Step 1: Prepare the Dough and Bake the Cookies

Preheat oven to 350 degrees F

Mix all your ingredients but the chocolate in a large mixing bowl

Form dough into little balls on a cookie baking sheet

Press your thumbs down into each ball to form thumbprints

Bake for 10-12 minutes, depending on the thickness of your cookie. They should look golden brown in the oven!

Step 2: Double Boil the Chocolate and Fill Your Thumbprints

Using a double boiler, melt your chocolate

Fill each thumbprint space with a spoonful of the melted chocolate

Place in refrigerator to let harden

Step 3: Once the Chocolate Has Set, Enjoy Your Cookies!
